Ingredients :
Nachos Supreme
1 Tbsp. olive oil (extra virgin)
1 medium white onion (diced)
1 Tbsp. garlic (minced)
1 lb. ground beef (lean ground beef is recommended)
4 oz diced green chilies (1 x 4 oz can, drained)
1 taco seasoning mix (or use 1 packet of seasoning mix)
15 oz refried beans (optional - 1 15 oz can)
17-18 oz tortillas (a larger bag of tortilla chips)
1 cup nacho cheese sauce
2 cups Mexican cheese blend
Nachos
diced tomatoes
pickled jalapeno
diced avocado
chopped cilantro
cream or sour cream
chopped green onion
sliced olives
Pico de gallo
guacamole
Instructions
Preheat your oven to 425 degrees F (218 degrees C) and line a large rimmed baking sheet with foil for easy cleanup, if desired.
In a large skillet or non-stick pan, heat olive oil to medium-high. Once shimmering and just beginning to smoke, add the diced white onion and sauté for 2-3 minutes. The onion should become fragrant, soft and transparent. Add 1 tablespoon of minced garlic and sauté with the onion for 30 seconds to 1 minute.
Add 1 pound of ground beef, separate and brown until almost completely browned or about 5-6 minutes. Add taco seasoning and stir into ground beef. Add water as directed on your package (or use ¼ cup of water with my homemade taco seasoning mix). Mix refried beans with ground beef and taco seasoning. Cook until beans are hot.
Spread tortilla chips as a base, then top with 1 cup nacho cheese sauce (heat in microwave before pouring over chips), beef and bean mixture and 2 cups shredded Mexican cheese mixture.
Bake at 425 degrees F (218 degrees C) for 15 minutes or until cheese is completely melted and lightly browned.
Remove from oven and add your favorite toppings and serve immediately.
