Cast Iron Skillet Garlic & Brown Sugar Pork Chops

 

Ingredients

2 large, thick, boneless pork loin chops, 1 inch thick (about 1 lb. each)


4 Tbl. butter


Rub in the mixture:


1/4 cup dark brown sugar


1/2 c. Slap Ya Mama Cajun Seasoning


1/2 c. salt


1/2 c. coarsely ground black pepper


1/2 c. garlic powder


1/2 c. paprika


Instructions

Preheat oven to 350º F.

In a small to medium-sized bowl, mix rub ingredients well.

Pat the mixture onto each side of the two chops.

In a cast-iron skillet, melt butter over medium-high heat.

Place chops in skillet and fry on each side for 4 minutes each. (8 minutes total).

When the second side is done, flip the chops and jump into the preheated oven.

Bake for 4 minutes. Turn chops over, baste and bake for 4 more minutes.

Turn chops over, baste and bake for 4 more minutes or until cooked through in the center. (* Total cooking time, frying and baking, is about 20 minutes for extra thick chops. Cook less for thinner chops).

Remove chops to plates and let stand for a few minutes before serving.
