INGREDIENTS
chicken of your choice: breast cut into 3 pieces, drumsticks, thighs
flour
2 eggs or 3
milk, about 1 coffee cup
plain corn flakes
1 tsp of each spices: ginger, paprika, garlic powder, dehydrated onions, celery salt
1 pinch of chilli and cumin
lemon juice: the one in a small bottle is fine
INSTRUCTIONS
Pre-cook the chicken pieces in steam for 20 minutes (10 minutes for the white pieces), then sprinkle them with lemon juice until they cool down a bit, add salt and pepper.
In a bowl, mix flour and spices
Coarsely crush the corn flakes
In another bowl, mix eggs and milk
Dip each piece of chicken in the egg, then in the flour, then again in the egg and finally in the corn flakes.
Fry for only a few minutes until golden brown.
NOTES
You can keep this chicken warm in a 140° oven for 30 minutes. If you have some left over, you can reheat it at 180° for 10 minutes.
