Ingredients:
900 g cold mashed potatoes
5 slices of salted bacon
1/2 teaspoon onion powder
1/2 teaspoon of salt
1/2 teaspoon black pepper
2 eggs, well beaten
120 g cup of grated cheddar cheese
Preparation:
Place salt pork in a large, deep skillet, cook over medium-high heat, turning occasionally, until golden brown and crisp about 10 minutes.
Remove the slices of salt pork and crumble them. Leave the bacon in the pan.
Combine mashed potatoes, eggs, onion powder, salt and black pepper in a bowl;
Stir in crumbled salt pork and cheddar cheese.
Form mixture into 8 patties.
Heat lardons over medium heat; fry in skillet until crisp on both sides, about 4 minutes per side.
