Do you love Mexican food? Then you have to try this quick minced meat recipe. The base is a chili con carne, which can be modified as desired. Simply unbelievably delicious!
You need for a large baking tray:
500 g minced meat (mixed or beef)
2 packages of nachos
1 onion
1 tablespoon tomato paste
1 can of chunky tomatoes
1 can chili beans
Mexican spices
salt and pepper
pinch of sugar
1 package grated cheese
For topping:
1 bunch scallions
1 cup sour cream
Jalapeños
How to make it:
For the chili con carne, finely dice the onion and sauté in a little oil until translucent. Add the minced meat and fry until hot. Add the tomato paste and fry briefly as well. Now add the tomatoes and the beans.
If you like you can also add a small can of corn or fresh diced peppers. Season with plenty of Mexican spices, salt, pepper and a pinch of sugar. Simmer everything for about 10 minutes. In the meantime, wash the scallions and cut them into fine rings.
Place baking paper on a large baking sheet with extra-high edges and spread the nachos on it. If you don't have such a baking sheet, you can also use a shallow baking dish. Spread the chili on top of the nachos and finish with a generous sprinkling of grated cheese. Let bake under the oven broiler until the cheese is melted golden brown (be careful, it can burn quickly!).
Remove from oven and top with scallions, sour cream and jalapeños.
