Ingredients (for 10 muffins) :
1 cup oatmeal (quick cooking oats)
1 cup buttermilk (or milk with a few drops of vinegar)
1 cup flour
1/2 tsp baking soda
1 tsp. baking powder
1 cup brown sugar
1 beaten egg
4 tbsp. butter (melt)
1/2 cup sultanas, chocolate chips and/or nuts
Note: I added chia seeds, and since I was doubling the recipe, I added an extra egg. In case of a simple recipe, remove some flour otherwise the muffins will be too dry.
Preparation:
Mix the oatmeal and buttermilk (or milk) in a large bowl. Let stand.
Meanwhile, mix flour, baking powder and soda together. (Chia seeds too, if using).
Add the egg, butter and brown sugar to the soggy oatmeal. Mix well.
Add the liquid ingredients and any additions (sprinkles, nuts, etc) to the dry ingredients. Stir as little as possible.
Pour into muffin tins and bake at 350 F for about 20-25 minutes.
