Ingredients:
1 cup (250 grams) chicken breasts, cut into pieces
Oil for frying
2 tablespoons of olive oil

Frying batter :
1/2 cup (125 mL) flour
1/4 cup (65 mL) cornstarch
1 egg white
1/3 cup (80 mL) cold water
1 tablespoon oil
Pinch of salt
Sauce:
2 tablespoons soy sauce
1 tablespoon rice vinegar (or apple cider vinegar)
4 tablespoons of sugar
2 teaspoons cornstarch
Preparation:
1. Mix all sauce ingredients until well blended.
Set aside.
2. Combine all batter ingredients in a bowl and mix well.
Dip chicken pieces in the mixture.
3. Heat the oil in your deep fryer to 350°F (175°C) or the oil in a pot.
4. Dip chicken pieces in oil and fry until golden brown.
